Good morning (good afternoon??!)!

Sorry for pulling a disappearing act but this is the first appropriated time I’ve been near my laptop in 24 hours. Work was insane yesterday!

Here’s a recap!

Yesterday adhering my way to work, I snacked on a carrot and almonds (exciting, I know):

Lunch was more leftover curry and an asian pear. I’m sort of addicted to these….love the crunch!

I went to my favorite coffee place on my break and grabbed the world’s best vanilla latte. Seriously, it was really the best latte that I’ve EVER had. I wish all y’all could experience Flying Goat Coffee…..its pure love.

Tempeh Curry

I’m writing this as I’m eating dinner, which is not something I normally do. But I think this is one of those recipes that a lot of you are going to like, and I’m feeling the extremity to share it with you now rather than later. It came together as I was riffing off one of Lora Zarubin’s recipes from I Am Almost Always Hungry – her Potatoes with Tomato Curry. I love an all-in-one-pot meal, and was cobbling together a hearty, vegetarian version of her recipe with tempeh. It wasn’t at all complicated, just an onion sauteed with a short list of spices, diced tomatoes, a splash of cream, and eventually potatoes and tempeh. It all came together in a vibrant red-orange pot of curry.

Recipe: Pan Grilled Ahi Tuna with Avocado Chimichurri

Thanksgiving is right around the corner (have you voted in the Thanksgiving poll yet? Go ahead and grant so now… I’ll wait. :) ), which means a LOT of turkey and a LOT of other leftovers. As much as I adore Thanksgiving fare, the endless leftovers can get a bit repetitive, so I try to make sure I have as little poultry as possible before the big day. This way I’m very much into all that turkey I’ll be ingesting for the next month or so. Of course, there are many creative things one can do with Thanksgiving leftovers, like my mom’s Arroz con Pavo (which will get a much better photo this year), and I’m going to be covering my After Thanksgiving Colombian Tapas Party next Sunday, November 29th, so you can read about me really getting my cook on.
